Some nights you just want a simple, but delicious non labor intensive meal. Cooking a full meal every night can be overwhelming, and just impossible, when you are completely depleted.
However, we don’t have to throw caution all the way to the wind, on those lazy/tiring nights. Sandwiches are perfect solution to dinner options for these sort of nights.
Who doesn’t love a warm, and tasty tuna melt. Especially one peppered with jalapenos!!! The key to a good tuna melt for me is perfectly toasted bread.
He replied, “Because you have so little faith. Truly I tell you, if you have faith as small as a mustard seed, you can say to this mountain, ‘Move from here to there,’ and it will move. Nothing will be impossible for you.” (Matthew 17:20)
For the Tuna:
o 4 Cans of your favorite brand tuna (preferably in water, not oil)
o ½ Mayo (with Olive Oil for healthier option)
o A dash of salt and pepper
o 1 onion diced very small
o 1 jalapeno (half diced, the other roughly chopped)
o A squeeze of lemon
Combine all these ingredients in a bowl.
Grab a couple slices of your favorite bread, and add a little butter to the outter sides.
Spread about 2 generous scoops of your tuna, then add a slice of American cheese, and a few pieces of the roughly chopped jalapenos.
On a small portable grill (like the Foreman Grill), place the sandwich, and grill until cheese is well melted, and bread is toasted golden brown.
